My Yorkshire: John Davidson, Chef, Harrogate

 

I moved to Yorkshire in January 2002 but I’m from Scotland originally. My wife is from Yorkshire and our son was born here too, so I definitely consider it my home. As a chef, I feel very lucky to live and work here because of the amazing produce on our doorstep.

At Cedar Court Harrogate we source all of our ingredients from within a ten to fifteen mile radius, so all of our ingredients are incredibly fresh. The inspiration I get from this helps me create menus that celebrate Yorkshire food, such as fresh, crunchy asparagus with a poached egg and hollandaise sauce, followed by a venison steak and chocolate, ending with a selection of rhubarb treats. For me, that’s Yorkshire on a plate.

My work as a chef means that I work long hours throughout the week, so I don’t get to enjoy Yorkshire’s attractions as much as I’d like to. But I love Eureka! The Children’s Museum in Halifax for family days out.

At present I’m doing a teacher training course at college so that I can fulfil my ambition and teach others how to cook. During my time as a chef, I’ve visited numerous suppliers and that’s taught me a lot about appreciating the production of the ingredients I work with everyday. I hope to pass this knowledge on to my students so that even more people can learn about how Yorkshire’s great food is sourced.

My colleagues loved the photo of me holding the salmon! They’re a great bunch and it’s a fun and interesting place to work. We hope that some of that comes across to the guests who stay with us on their own Yorkshire adventures.
