Week 3 ................... Dessert
The final week, the menu is now complete.
Rhubarb Soup
makes 6-8
150g Rhubarb
120g Sugar
250ml Water
½ Vanilla Pod
50ml Red Wine
Chop the rhubarb, split the vanilla pod and put everything into a pan bring to the boil then simmer until the rhubarb is soft. At this point you need to stick blend it and pass it, check for the sugar levels a little thing I like to do is add a little vanilla salt this will lift the flavors a little more.
Blood Orange Compote
makes 6-8
(you can use plain oranges if you prefer)
3 blood orange
100g sugar
very simply peel the oranges and chop them up, now using the juice from the oranges and the sugar make a syrup and reduce down until nice and thick, then add the chopped oranges and leave to cool.
Blood Orange Sorbet
makes 6-8 (you can use plain oranges if you like or blood oranges)
100g Sugar
50ml Water
200ml Blood Orange Juice
Zest of one Orange
Juice of one Lemon
This sorbet is real easy to make, just put everything into a pan, bring to the boil for 5 minutes and allow to cool then freeze. Just give it a little mix every 20 mins uniil frozen, a little extra I like to do is to add a splash of cointreau to give it a little something extra
